How to make Turkish coffee foam: causes and practical fixes
Check the grind, measured quantities and heating first, then notice when the foam disappears: in the pot or during pouring. Little foam alone does not prove stale coffee or identify a single cause.

A thin layer from the start, foam that rises then collapses, and foam that reaches only the first cup are different observations. Brew a measured batch and watch the stages before replacing the coffee, pot and water at once.
Mehmet Efendi's published cezve method uses slow heating, sharing some foam and gentle pouring. Those provide a reference for this review. The table below proposes controlled home experiments; it is not a laboratory diagnosis or a guarantee that each change will work.
Possible causes and practical changes

Check grind and dose before adding another spoonful
Turkish preparation calls for a powder-like grind. Coffee sold for filter or espresso brewing is not automatically suitable. Ask specifically about grind, then use a measured dose. Adding unmeasured coffee makes an improvement difficult to repeat.
A new cup changes the water volume even if you still use one spoonful. Check the ratio guide first. Do not keep increasing the dose just for foam if the taste becomes more concentrated than you enjoy.
Review heat, stirring and the lift point
Combine and mix the ingredients at the start, then watch the surface rise. If the rise happens too suddenly to control, try gentler heating next time. A fixed number of minutes cannot account for every pot, hob and batch.
Published and household methods differ in stirring and reheating. Choose one method and repeat it before comparing alternatives. One useful experiment is to disturb the formed surface layer less; do not also change the ratio in that attempt. Prolonged vigorous boiling is not a reliable way to produce more foam.
With an electric Turkish coffee maker, use its instructions for water, quantities, stirring and cleaning. Do not reproduce stovetop movements while its pot is operating inside the appliance or add other ingredients simply to thicken foam.
Keep water and pot conditions consistent
Use drinking water and keep its source and starting temperature consistent during trials. If you recently changed the water, note that change. Foam cannot diagnose water hardness, and this guide does not prescribe mineral additions or a particular mineral reading.
Use a clean pot suited to the quantity. One serving in an oversized vessel and four servings in a small vessel are different tests. When comparing pots, retain the same measured coffee and water where capacity allows and record which pot you used.
Does little foam prove that coffee is stale?
You cannot date coffee by its appearance. Check the package information, when it was opened, how it was closed and where it was kept. A change in aroma and taste during storage is worth investigating, but it does not establish an unknown roast date.
We do not promise a storage period that guarantees foam or assign an unpublished roast date to Alagnaf products. Close the package well, protect it from moisture, heat and surrounding smells, and compare using a consistent brewing method.
Make the final check at the pour
Arrange the cups before lifting the cezve. Pour gently from close to them and distribute the batch the same way each time. If foam remains in the pot, test the pour before changing the coffee.
Record whether a surface layer appeared, whether it collapsed on the heat and whether it disappeared during pouring. Then select one adjustment. If you enjoy the taste, appearance alone need not persuade you to abandon a method that works for you.
