What does extra virgin olive oil mean?
Extra virgin is an olive-oil category defined by its production method and chemical and sensory requirements. It is not just a flavour description, and low acidity alone does not establish the grade. EVOO stands for extra virgin olive oil.

The International Olive Council defines virgin oils as obtained from olives by mechanical or physical means under conditions that do not alter the oil. Permitted treatments include washing, settling, centrifugation and filtration. Virgin therefore does not mean cloudy, and filtering an oil is different from refining it.
Separate extraction method from final category. An oil can be obtained by those means while its grade still depends on assessment. An attractive mill photograph or package claim cannot replace the requirements.
Extra virgin versus virgin
The IOC trade standard COI/T.15/NC No. 3/Rev. 22, June 2026, sets free-acidity limits of 0.80 g per 100 g for extra virgin and 2.0 g per 100 g for virgin, expressed as oleic acid. These are limits within an international standard, not Alagnaf batch results or a separate statement of local law.
Both grades have other requirements. Comparing acidity figures alone is insufficient; see definitions in section 2.1.1.1 and quality criteria in section 4.

Why sensory assessment accompanies laboratory analysis
Chemical analysis and sensory assessment examine different aspects. The IOC sensory method uses a trained panel to assess defects and fruitiness through a defined procedure. Meeting the extra virgin sensory requirements is different from pleasing one individual taster.
Bitterness and pungency are not automatically signs of spoiled oil; the method defines them as positive attributes. They do not establish a grade on their own either. At home you can describe aroma and flavour or query an unusual change; establishing the category requires the complete assessment.
What extra virgin does not promise
The category does not automatically mean organic, certified by a particular body or harvested in a particular year. If a label says cold pressed or cold extracted, ask what supports that statement; do not substitute it for the category and the rest of the product information.
A flag or country name in a design is not a complete origin record. Oil origin, packing location and brand identity are separate pieces of information. Check the wording rather than relying on the impression made by the package.
Use the definition while choosing a bottle
Read the category first, then origin, dates, volume and contact details. If you want extra virgin, do not assume pure oil means the same thing. If a seller provides a report, check that its lot reference corresponds to the bottle you are considering.
Next choose a size that matches your use and storage space. A larger bottle does not improve the grade, and a grade cannot replace care after opening. Choose a bottle you will use regularly and close it after pouring.
